This San Mai blade is comprised of 2 layers of Damascus steel each having 56 individual, hand-forged layers. These outer layers are forge welded over a middle piece of high carbon and nickel steel known as 15n20. Giving this blade a total of 113 layers. It is forged and ground in the Japanese style known as SANTOKU. It has an overall length of 12” with a 7” blade length. It is 1.7 inches wide at the belly. A full flat grind with superb distal taper.The handle is California Buckeye Burl vacuum stabilized for lasting beauty and durability. It is lined with black and white spacers and mounted with 3 stainless steel pins. The most comfortable chefs’ knife you will ever use!
